WIAW #39

Hello friends 🙂

Hope everything is going good on your Wednesday afternoon. Mine is pretty busy- exams at school, studying, and lots of gym time. I am still keeping up with my weight loss challenge even though I’ve only lost a little over 2 pounds in four weeks, haha! I wish that was a joke. Oh well, I have been pushing myself really hard and I can’t even remember the last day I wasn’t sore! <<<- I think that’s when you know you’re doing great!

Breakfast:

Gluten-free, protein packed pumpkin spice pancakes {with chocolate chips!}

I found an old recipe on my blog for vegan pancakes then used GF flour instead of whole wheat, and added chocolate chips and lots of pumpkin pie spice instead of just cinnamon. I honestly thought the texture on this cakes where a lot better than the original some-what gooey cakes. The GF flour made the pancakes so much more fluffy (and nutritious 😉 ) !

Lunch:

Wet bean burrito!

Dinner:

Snacks:

Almonds and chocolate chips! yes, I ate them just like this ^. One almond, one chocolate chip. Party in the mouth.

 Breakfast

Coconut yogurt (for .29 cents!) topped with homemade granola, and a pear on the side. Later on I ate some oats and a muffin I baked for the market! Yum.

Lunch

Homemade mac & chreese! Yum. I made this out of gluten-free brown rice mac noodles and Tal Ronnen’s cashew cream (1 cup soaked cashews overnight, then blended in the Vitamix with water) mixed with a tomato, basil, nooch, S&P, turmeric, and Diaya. I baked in the over at 350 for about 10 minutes until gooey and creamy. I was very impressed with myself! Super creamy and still pretty healthy! It taste so naughty. 😉

Dinner

Fattoush salad and other random items such as a banana bread LARABAR, hummus, & tempeh.

Hi guys! Happy Wednesday. Hope everyone is having a great week! Mine is pretty busy, as usual. Just catching up on some sleep, baking, school stuff, and experiencing a massive heat wave! I love the sun but when I don’t have time to go swimming or lay out by a pool, a heat wave is slightly annoying! But I’m not complaining, I’d pick a heat wave over a snow storm any day.

So here we are, another weekly WIAW, my favorite time of the week for blogging! Jenn does such a great job hosting the link parties each week, I love the post WIAW blog stalking, so start your own WIAW post today and be sure to link up to the party!

Breakfast

Tofu scramb, whole wheat chocolate chunk scone, a 3 pound bag of the ‘stashies.

Just joking, but seriously, look at how many I ate in the last 4 days! At least half the bag.

Lunch

Bean burrito, nothing too fancy.

Snackage

Peach donut? Enough said.

I’ve never seen these before but they were pretty good. The inside is white and hard like a peach, but I like my peaches mushy! I’ve also squeezed in a green smoothie for a snack too, perfect for this heat wave.

Dinner

Yellow zucchini (not yellow squash!) mixed with artichokes and a few seasoning made my the chef boyfriend. He also made me a kick butt tempeh BBQ sammich that was sooo yummy!

Favor

Scott and I are taking our yearly camping vacation out in the middle of no where with no phone, internet, or cable action. I am really looking forward to being “unplugged” for a week, however, I will still keep up on posting with scheduled posts. I know it is still a little over a week away, but I would really like some guest postage while I’m gone! WIAW week 21

Breakfast

  • Tall green juice (cucumber, green apple, parsley, sprouts, lemon)
  • Iced tea

 

Lunch

  • Half of a leftover bean burrito

  • Half of a leftover espresso fudge brownie

  • Water

Dinner

  • Stir fry w/ tofu

Snacks

  • a few too many servings of pistachios

  •  8 ounces of raspberries

  • 1 mango

  • a handful of grapes

  •  chocolate 🙂

 

I haven’t been to the gym in FOREVER. Now if you’ll excuse me, I’m going to ditch studying and get my Zumba on.
(Seeing how my studying is getting me NO WHERE…. more on that a different day?)

This gooey wrap with cream “cheese”, tofurkey, mushrooms and spinach.

Yes, today’s meals were filled with lots of meat/cheese alternatives. Yummy yummy. :/

What I didn’t tell you-

The night after my run (Sunday night) I became extremely ill. I went to bed at 11, woke at 1, felt like throwing up, didn’t go back to sleep until 5:30. It was horrible. What was up with this? It is extremely rare for me to wake up in the middle of the night. What could have caused this?

  1. Food poisoning?

  2. Eating the left over pumpkin that was in the fridge for a few too many days?

     


  3. Taking a pain med before bed? (pain meds can sometimes make me ill)

     

  4. Going for a run after a large meal?

After slight research I came to the conclusion that running after a large meal is a major no no. First off, after eating your body is digesting. This takes a ton of energy! Adding exercise on top of all that work is overwhelming for the body, I was asking it to do too many things. Sorry bod! Love yew. Second, after researching more on GERD I found that my symptoms were identical. It did sort of feel like heartburn but way more intense. Still, three days later, I feel worse after eating. Last, I need to stop eating so fast, seriously.

Have any runner ever experienced this?

Hey, at least it wasn’t my knees this time!

WIAW week #9

Hey guys, sorry about that post yesterday. I originally posted my broc cheddar soup recipe then for some reason it got posted under March 12th. So this soup is awesome… check it out here.

Breakfast:

A bowl of home-made granola and a unpictured smoothie.

Lunch:

Oh my, a salad on my blog! Yes, I do eat them occasionally. My friend and I had a salad making party the other night and this was the leftovers. The sammich is an “egg” salad sammich I got from a new local health food store. I was so excited that they made “egg” salad! Actually, all of their salads are vegan. They have a yam potato salad, regular potato salad, tempeh walnut (like faux tuna salad), and lots of other salads I have yet to try!

Snackage:

Dinner:

A lovely meal prepared by my boy. Pasta with a “chicken” patty and garlic bread. Yes, I finished my plate, don’t worry. 😉

Blizzard:

Holy cow, that’s my iced car! It was so nice out and then BAM snowy freezing rain just when I thought it was over. Can I move now? 😦

Fruit & Fitness Routines

‘Morning friends 😉

How is everybody today? I hope your week is going well. I am currently blogging from my college campus which is pretty sweet. I hate hauling my laptop around because it weights a ton but hey, I am making great use of my break time. Not only by blogging but by eating a yummy lunch I prepped last night:

Spinach tortilla with avocado, black beans and romaine lettuce inside

Organic fruit salad made by your truly using all fresh fruits from the Flint Farmer’s Market.

Mmmm organic strawberries…. so little and sweet.

This guy is far to wittle and cute to eat! ♥

Nahh, just kidding. I ate him anyway. >:D

Don’t you agree that fresh, organic fruit taste so much better than the store-bought stuff? I could go on and on about why you should buy from farmers but I wont get into it today. All I’m saying is I bought peaches, nectarines, blueberries, raspberries and strawberries yesterday for less than $15 and made a huge bowl of fruit salad that will last me a few days. Not only does the fruit taste better from a farmer’s market but its good to support the farmer’s that grow the produce.

In other news, I am planing out a workout routine to get me back and shape, or just back to being slightly active anyway. I’m getting much too lazy these days. My workout plan is starting to look something like this:

One day a week I will pick one of these activities of the day. I must choose one and use only one per day.

  • Rest day

  • Mild exercise (such as walking)

  • Mild exercise (again)

  • Cardio and arms

  • Cardio and legs

  • Cardio and core

  • Core and arms

Sounds like a pretty good plan for me. I found out that I don’t do so well when I plan things like, “Tuesday = cardio and core ONLY” This makes me not want to go to the gym on Tuesdays! Do you have a workout routine? If so what is it?

I have not tried more ways to eat my coconut butter yet, but I’m really excited to do so. I’m still up for anybody’s ideas!

Fall Nature Walks

Are my favorite 🙂

After waiting for my 11am class for 2 hours this morning, I find out it was cancelled. At first I was angry that I wasted so much time waiting for my next class but then I realized, hey! I don’t have english today! Good deal. And that’s when I went for my walk. It was such a beautiful day out, I’m glad I had the chance to enjoy the weather.

So as promised, my full adventure from yesterday. We went out for lunch at Pei Wei for the first time. I was really excited when I saw their menu because they had tons of vegan options. Basically, you can replace any meat dish with tofu or veggies. Awesome, right?! I was so excited I finally got to eat sweet and sour tofu… or so I thought. When I ordered the sweet and sour ‘fu I expected it to look like the sweet and sour chicken I guess. You know, breaded, flavorful, different… I was wrong. The sweet and sour tofu was like stir fry with sweet and sour sauce.

If I wanted stir fry I would have saved $7 and made it at home. I mean it wasn’t bad, it just wasn’t what I was expecting. I wanted something nobody else has. The dish also had a very over-powering ginger taste that was not very pleasant and not to mention the brown rice was rather dry. I’m really glad that I also ordered the veggie springs rolls because at least those were somewhat good.

I think I would actually try this place again and order something completely different like pad-thai. They have a lot of good-looking choices on their menu so I hope to go back and find something spectacular.

Later we went to Whole Foods to do a little shopping. I picked up some new things to try like…

Ta-da! After hearing all the ranting and raving over coconut butter,  I finally bought some. Now what? Make a smoothie, bake with it, use it as a dip? Who knows. I’ll probably go and stalk some of your blogs to figure out something I can make with it. 😛

What a love most about Whole Food’s is their amazing salad bar, they have everything! I don’t even really like salad but their salad bar always looks amazing. Little did I know they also carry vegan caeser dressing!!! The dressing was really garlicy and creamy, I loved it. They made a good lunch for school today.

After getting a few things at Whole Foods we went over to Trader Joe’s to do some more shopping. I found something I have never noticed before.

These were delicious. I normally would eat a muffin as a snack but I ate this for breakfast with a piece of PB’d toast and it kept me full for a long time. I would have bought more than one package of muffins but they all expired within a few days (hey! that must mean they are made with real ingredients!) Next time I want to try the carrot muffins!

I think I’m going to hang out around the house for the rest of the day and enjoy my day off of work. Maybe I’ll read some other blogs and get motivated to cook something, you never know. I hope everyone has a marvelous monday!
