Operation Overstock

Wow! Lots of my readers have entered the Nutty Giveaway! I cannot wait until tomorrow to see who the winner is!

As you know, one of my May Gals is to save money. To be honest, I’m not the average 19-year-old who spends all their money on designer clothes, getting my nails/hair done, purses, shoes, and the newest electronics. If you must know, I wear yoga pants just about everyday, have NEVER had my nails done, is lucky enough to have a mom that is best friends with a hair dresser, uses the same bag everyday that I bought on my Paris trip in 2009, has never spent over $60 on a pair of shoes and has used the same Ipod since 2006.

Now, if you haven’t noticed, I do spend most of my extra money on food. Not because a vegan diet is costly but because I sometimes choose to spoil myself with the latest health foods like Chia seeds, fancy nut butters, and the entire Bob’s Red Mill collection oh, and not to mention my obsession with Amy’s Kitchen frozen meals.

U n n e c e s s a r y !

My pantry is jammed packed with all of these things I never even use. My mom, very seriously, tells my dad that he needs to build another shelf in the laundry room for all of my food (I almost took a pictures of my overstocked kitchen but I’m actually too embarrassed!). This has gone too far.

Anyway, there is a point to all of this.

Operation Overstock means….I am making it my mission to NOT shop for anything but fresh produce until my pantry is CLEAN. Or at least close anyway. I have endless boxes of pasta, different types of flour, cereal, dried fruit, protein powder, beans, and of course…nut butter. For the next few weeks I will just make do with what I have for most of my meals.

Fantastic World Foods Review Part 2

Part 2- Taco Filling

My family decided to make taco’s for dindin and I kinda felt left out. Just kidding! I reached for my Fantastic World Foods TACO FILLING and joined the fiesta. The taco filling is made from TVP which I happen to be a huge fan of. With only 100 calories a serving who wouldn’t be excited? What I loved about the taco filling is that it didn’t taste like ground beef. Sometimes I feel like companies try too hard to make vegetarian products taste like the real deal and I don’t like that. Then it’s just weird. I like “fake meats” to taste like veggies and seasonings. Does that even make sense?

I remember how greasy and dry real ground beef tacos would taste, not pleasant at all. you can tell just by looking at these tacos that there is no dryness here!

 Would I buy these again? No doubt! 🙂

It’s Wednesday! You know what that means…

 

Breakfast:

Oatmeal with PB and a juicy orange!

Lunch:

Quinoa pasta! What??? This stuff is awesome. The box says that once you try it, you’ll never go back to regular pasta. I think they are on to something…

& Guess who finally tried Kabocha squash???

Loved it! Oh my gosh. I don’t know why this was so incredibly good. It was roasted with butter, salt and pepper. Amazing! Why does this taste so much better than other squash?!?!

Hello friends!

I hope everybody had a lovely Valentine’s Day!

First off, I want to let you all know that I am going to be okay! My test results came in and I’ve had a terrible yeast infection for the last 6 months that turned really bad. Obviously you should go get that stuff check out ASAP, unlike me. (I didn’t have health insurance for a few months 😦 ) But this is like the BEST I could have hoped for because they worried me so much with all the other things they thought my infection was. I am so relived! Actually, I’m kind of mad that they didn’t test me for this first because I told them I thought I had a yeast infection….silly doctor’s.

 

ANYWAY.

Look what my Valentine made me! 🙂

Angel hair pasta & homemade sauce with black olives, mushrooms, artichokes, onions, and probably some other stuff I can’t remember.
I love him. Not just because he cooks the best meals in the world, but he is so sweet and good to me every single day, I’m so spoiled!

 College Rant Start.

By the way, my new psychology class is going very well! I really enjoy learning how the mind works. Although, I feel my hardcore Christian side come out sometimes and want to blurt out, “THAT’S JUST THE WAY GOD MADE US! GET OVER IT!!!!” For example, finding out whether or not your unborn child is mentally challenged. Give me a break! Every child is a gift from God, and matter of fact, mentally challenged children are such a greater gift on a whole nother level. Yes, they may be quite costly. But you know what? How often does a mentally challenged child beg for the latest designer jeans, and the hottest new car? Not often.

Also, I feel my animal advocate side boiling up too because we talk a lot about animal testing which pisses me off! My teacher talked to us today about why rats are good to experiment on. I guess it’s because if you inject them with cancer, they react quicker than a cow would… isn’t that lovely? And then he goes on to talk about how a rat is NOTHING like a human so we don’t ever know if the testing is accurate or not. That makes sense, right?…

Do you ever feel like blurting out random feelings at unnecessary times?

College Rant Over.

Do you like how I just tried starting that off positive and then it turned evil! Haha. Sorry, I drank coffee for like the first time  w e e k s  today and I can’t stop typing! I was sooo freakin’ tired before class, I needed it. Well, I thought I did. Then it kind of made me sick.

I wanted to do another post about sugar, but I’m not in the mood. … maybe tomorrow!

Hello everyone 🙂

I’m glad to see that more people are turning orange from my last post!

I’ve been so busy all weekend with helping my boyfriend move I haven’t been do much posting. To make up for it I present with you this simple and cheap recipe:

Serves two

You’ll need:

  • Pasta of choice (I used angel hair)
  • Frozen veggies of choice (I only had mexican style)
  • Pasta sauce
  • Nutritional Yeast
  • Gardein crispy tenders

  1. Boil Pasta

  2. Cook tenders

  3. Cook veggies

  4. Measure out one cup of pasta sauce and place in mircowavable bowl.

  5. Add 2 T Nutritional yeast to sauce and mircowave for 30 seconds.

  6. Mix together and eat.

Seriously, it’s that easy. I may or may not have devoured this entire plate.

I am absolutely in love with these crispy tenders!

And check out these ingredients:

gardein™ chick’n: water, soy protein, vital wheat gluten, ancient grains (quinoa, amaranth, millet and kamut®), natural flavors (from plant sources), potato starch, expeller pressed canola oil and/or safflower oil, pea protein, modified vegetable gum, carrot fiber, organic beet root fiber, organic evaporated cane juice, yeast extract, sea salt. seven grain breading: water, modified cornstarch, toasted wheat crumbs, wheat flour, onion powder, soy lecithin, spice, corn flour, baking powder, guar gum, rice flour, oat bran, oats, quinoa flour, amaranth flour, millet flour, kamut®.

These are not only the best tasting chick’n I’ve ever had but they are also the most nutritious by far.

West Side Story

Whitney loves Lake Michigan

Wow I sure have seen a lot of bodies of water this summer. It is not too often I travel to the west-side of Michigan. I don’t really know anybody who lives out that way so I feel like I don’t really have a reason to go there.  We went out there for a wedding that was in Holland, which is still in the middle part of Michigan. (Up-north on the west is beautiful!) There was sooo much to see in only three days!

Friday, Scott and I hung out at the beach and did a little shopping in downtown Holland. We went to a peanut store (more like a candy store) and I found one vegan candy. The brand was called “Maple Grove Farms”. The candies were shaped like little leaves and acorns. The best part was the candy only had two ingredients; pure cane syrup & pure maple syrup! Yumm. The candies were so rich and creamy and tasted like nothing I have ever tried before.

Saturday, was the day of the wedding. The continental breakfast being served and the hotel literally had a few types of cereal, milk and a bag of bread. Not too impressed. Luckly down the road there was a cafe called “Good Earth Cafe” that served a good breakfast.

Judging by the name you would think this cafe was vegetarian friendly and they were. Lots of hummus, cheese and veggies. I didn’t see any totally vegan options for breakfast so I got an over-priced cranberry-walnut bagel toasted with organic PB.

I knew I wouldn’t have a lot of other food options on this day so I tried to get full!

After breakfast we got ready for the wedding and met up with some of Scott’s family. The weather was perfect for an outdoor ceremony.

On the way home we stopped for an Indian dinner near Grand Rapids. I wish I could remember the names of the dishes I tried because they were all so wonderful! A little spicy for my taste, but nothing I couldn’t handle!

After living off peanut butter and potatoes all weekend, I could not wait to dive into some real, whole foods. I started making this dish today when I discovered the organic broccoli I had just bought was covered in bugs. Not one bug… not five bugs…. COVERED IN BUGS. Gross!!! I understand it is organic and they do not use pesticides to kill the bugs but they should still clean the produce first! I was so disgusted I didn’t even want to eat the meal I made but you know I would anyway…

Today, I am relaxing by reading though everybody’s latest posts and sorting though some photo’s. I have no idea what I am going to do for my birthday tomorrow. I still need to make a cake!
