Vegan Pumpkin Cookies

13 Sep

Ahh, September.

Have I mentioned that september is my favorite month?

The cool, crisp weather.   The fall colors.   The start of something new.

And not to mention, the start of autumn food!

How about we start the month of right with Vegan Pumpkin Cookies?

Inspired by: Vegan Cookies invade your cookie jar

  • 1 cup canned pumpkin
  • 1/2 cup nonhydrogenated vegetable shortening
  • 1/2 cup sugar
  • 1/2 cup brown sugar packed
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup oat flour
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • A handful of shelled pumpkin seeds for garnish
  1. First, reduce the pumpkin. Place it in a saucepan over medium heat for about 45 minutes. Keep the heat low enough that it doesn’t boil, but it should appear to be steaming. Stir often. After about 30 minutes, spoon the pumpkin into a liquid measuring cup to check on how much it has reduced. It should be down to around 2/3 cup at this point. Return the pumpkin to pot to cook until it has reduced to 1/2 cup.  Set aside to cool completely.
  2. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  3. In a large mixing bowl, use a hand mixer to cream together the shortening and sugars until light and fluffy. Mix in the cooled pumpkin and vanilla.
  4. Sift in remaining ingredients and mix to combine. Spoon onto cookie sheets in rounded tablespoons of dough, flattening the tops with your hands. Arrange a few pumpkin seeds in the centers, if you like.
  5. Bake for 10 to 12 minutes. Remove the cookies from the oven and let them cool on the cookie sheet for 5 minutes. Transfer the cookies to wire racks to cool completely.

Normally, I do not eat any dessert unless it has chocolate in it. But these are one of my new favorites as far as non chocolate desserts.

(I have chocolate muffins in the over right now, just sayin’)

Perfect for the fall season!

What is your favorite fall recipe?

More & More Baking

23 Jul

Hey bloggins!

I’m feeling a little less cranky today so I thought I would share with you what I am baking!

Oatmeal Raisin cookies!

Pumpkin cookies!

These are my new favorite. Can you tell I am excited for fall sweets?

Recipes coming soon! (I know I’ve been slacking in the recipe department!)

What are your plans for the weekend?

What I did Thursday

7 Jul

Hey hey, it’s What I ate Wednesday!

Hey hey, it’s What I did Thursday! 😛

Thursdays are always fun, maybe that will be the next blog sensation?

Anyway, what an eventful Thursday! I am pooped. So much running around today I love my days off!

I really wanted to go to Whole Food’s today but then I remember that I am broke as a joke.

So, I cashed a few checks, gathered up some change, and said, “hey, I can pay those bills next week!” (you probably think I am joking but I am so serious.)

Might not be much change but it turned into $23!

Whole Food’s/Trader Joe’s:

Two favorite flavors right thurr.

Yummy finds from the salad bar!

Money saving tip: When at the Whole Food’s Salad Bar, be sure to load up on the good stuff. For example, I never get lettuce! I usually take my salads to-go so I can add whatever greens I have at home instead of paying $7.99/lbs for lettuce. Same goes with tomatoes! They add a lot of weight.

Veggie sushi!

Raw pumpkin seeds!

After our Whole Food’s/Trader Joe’s adventure we were STARVING.

We spotted a sushi place we have not noticed before and decided to stop in and check it out. Scott and I are HUGE fans of sushi, we eat it just about every week! We love trying out new places for a good roll or two. (or three?)

We started off with some miso soup:

Which happened to be cooked PERFECT! Crunchy green onions on top were awesome!

Next I ordered the veggie lunch combo which included the sweet potato roll and the asparagus roll:

Sweet potato rolls are always a win for me 😉

I also ordered a another roll because I was HUNGRY! This roll was called Veggie Heaven: Mushroom and avocado in a (vegan) tempura roll with ginger sauce. Topped with sweet soy and spicy mayo.

image

This is totally vegan! This fancy roll originally came with a spicy mayo, which I forgot to ask to not have, but since he knew I was vegan he gave me this yummy carrot and onion sweet sauce that was so creamy! Best roll ever. The mushroom and avocado literally melt in your mouth, delicious!

I ate 19 pieces of sushi.

(3 rolls)

I honestly think this was the most impressive sushi restaurant I have been too. Not to mention how incredibly friendly and helpful the staff were! That seems to be hard to find these days. We will diffidently be going to Sumo Sushi & Seafood next time we are in the area.

After this lovely afternoon of foodie goodness I met up with my bestie for a long nature walk:

Then sat at the Starbucks sipping on some green tea with lemon aid for quite some time.

Heather had the lovely idea of making some banana soft serve at my house. I’ve actually never made this before! I couldn’t wait to try it out in the Vitamix:

We looked up a few recipes but then decided that it would be best to make our own.

& What flavor would we choose?

Peanut Butter Chocolate Chip, duhh!

  • 2 1/2 frozen bananas, chopped
  • 1 glob PB
  • 1/4 cup chocolate chips

Blend the nanerz until creamy. Add the PB and choco chips than blend for another minute.

Enjoy!

After this, she helped my bake some cookies for the market on Sunday. We made Espresso Chip Oatmeal Cookies, yum! I wonder how they will sell.

Have you ever had banana soft serve? If so, what do you add to yours?

May Goals

2 May

Hii bloggins!

Did you have a good first day of May?

I know I did. You know why? Cause mine was filled with lots of food, duh!

Quinoa with sun-dried tomatoes and basil, black bean burgers, Peanut Butter Cookies

Because Megan reminded me!

  1. Save MONEY. On food, gas, and other mindless spendings. Even though I’m a major tight-wad, my savings are getting extremely low. My savings are basically for when I decide to transfer to a better college I would have to stress about mu-lah so much. Ya digg?
  2. Don’t over-eat on the sweets, nuff said.
  3. Work on them ABS 3 times a week! I love working out my abs, I know, I’m weird. Something about sore abs makes me feel like a million bucks.
  4. Run outside for 3 miles.
  5. Put school first. This 8 week semester just might kick my butt.

What are your goals for the month/summer?

Teaching Zumba this morning went pretty well. I messed up a few times but, we just laughed about it. I couldn’t practice my routine at home because my CD wouldn’t play in my CD player! They said I did really good though. I’m so lucky to have such a supportive class! Also, I’m realizing how hard it is to yell out directions and shake my butt at the same time! I don’t like it when Zumba instructors don’t yell out what’s coming next, it’s quite frustrating!

Oh, and before I go, here’s a sneak peek at tomorrow’s post:

I spy a GIVEAWAY

May Day

1 May

Happy Sunday!

& Happy May!

My cookies turned out PERRRFECT this morning! As much as I use this recipe, you would think they would always come out the same but not this time! If you haven’t tried my recipe here it is:

Perfect Peanut Butter Cookies

Yummy yummy!

Were not going to the Market today because it’s closed on Sundays! 😦

Good thing we didn’t drive an hour down there to find that out!

So now the plans are cooking out. 🙂

I love Cooking Out Sunday’s!

What’s your favorite veggie to grill?

Mine is eggplant, asparagus, and squash. (can’t pick just one you know!)

TOMORROW I’M TEACHING ZUMBA!!! SO excited. Wish me luck because I have not practiced at all. :O

A Day in the Life

20 Apr

Hello friends 🙂

I haven’t been posting a lot of meals lately. I’m a busy woman! But, I will let you in on today’s food I brought to work! Today I work from 7-3, so I like to bring a large snack like (a whole tub of) fruit or soy yogurt and granola which I usually eat around 10AM, because my break usually isn’t until about noon. On days like this, I’m not usually extremely hungry at 6:30AM so I’ll have toast with PB or a date bar before I leave. Sometimes, I even bring in overnight oats. So, yes, by 10AM I’m starving.

Green tub- Roasted veggies and potatoes with a falafel.
White tub- FRUIT MESS. Plum, pear, kiwi.
Middle tub- Homemade hummus.
Plastic bag- Chocolate chocolate chip cookie (the ones I tweeted about that I added too much liquid too, turned out tasting like brownies! WIN).
& Water. I get free water bottles at work but I feel bad for using bottled water sometimes :/

Somedays, I pack a lunch and dinner if I’m doing a work & school combo.

Oh, and yesterday my Zumba instructor was sick SO guess who got to teach for the first time? MEEE! It was so much fun! I loved it. I wasn’t even that nervous! Everyone was so sad that Zumba was cancelled then, when I asked if they wanted me to teach, they all started screaming and jumping around! It was so cute! I love them. I  messed up a few times but I have a feeling that nobody noticed!

Do you pack meals? If so, What do you pack?

Baking OCD

16 Apr
Sometimes, I wish my baking  o b s e s s i o n  would just go away.
Every time I see a recipe that looks yummy, I have a  c o m p u l s i o n  to make it.

Needless to say, these Chocolate Chip Cookie Dough Balls didn’t stand a chance.

In fact, I saw this recipe at about 11PM before I went to bed and I starting baking them at 1PM today.

Look at them though! They are just screaming, “eat me!”…

Not to mention how attractive you look while eating them…

Do you have Baking OCD?
