WIAW #39

Hello friends 🙂

Hope everything is going good on your Wednesday afternoon. Mine is pretty busy- exams at school, studying, and lots of gym time. I am still keeping up with my weight loss challenge even though I’ve only lost a little over 2 pounds in four weeks, haha! I wish that was a joke. Oh well, I have been pushing myself really hard and I can’t even remember the last day I wasn’t sore! <<<- I think that’s when you know you’re doing great!

Breakfast:

Gluten-free, protein packed pumpkin spice pancakes {with chocolate chips!}

I found an old recipe on my blog for vegan pancakes then used GF flour instead of whole wheat, and added chocolate chips and lots of pumpkin pie spice instead of just cinnamon. I honestly thought the texture on this cakes where a lot better than the original some-what gooey cakes. The GF flour made the pancakes so much more fluffy (and nutritious 😉 ) !

Lunch:

Wet bean burrito!

Dinner:

Snacks:

Almonds and chocolate chips! yes, I ate them just like this ^. One almond, one chocolate chip. Party in the mouth.

Halloween Soft Serve

Summer Scramble

Sometimes, I have a very hard time deciding on what to make for breakfast. To be honest, I have been late to work a few times because of this! Being the planner I am, you would think I would prepare for this dilemma but I still choose not to. My mind is always changing! Needless to say…

Yesterday was one of those days.

Tofu Summer Scramble

Made with tofu, onions, garlic, cherry tomatoes, spinach, yellow squash, Bragg’s liquid aminos, nutritional yeast, vegan cheddar cheese, salt and pepper.

Leftover veggies always works with tofu scramb!

What do you throw in your tofu scramble?

My favorite veggie to add is mushrooms!

That’s right, OOAP.

It’s the cool way to eat your oats!

It all happened last week when I was going through my usually breakfast dilemma.

Tofu scramb again? Maybe I’ll have a  green smoothie? But, I want something sweet with chocolate. Do I want oats or do I want pancakes? WHAT TO DO?

Obviously, what to have for breakfast is the most difficult choice of my day. 😉

I came up with a favorite past-time dessert (more on that below) as a perfectly balanced breakfast…

First, I decided to make a chocolate-fudgey version for my favorite oats.

Brownie Batter Oatmeal

  • 1/2 cup water
  • 1/2 cup non-dairy milk of choice
  • 1/2 cup 1 minute oats
  •  1 scoop chocolate hemp protein powder
  • 1 T chocolate PB
  • 1 t cinnamon
  • 1 t maple syrup
  1. Bring milk and water to a boil
  2. Stir in the rest of the ingredients and reduce heat.
  3. Cook for about 4 minutes stirring occasionally

Breakfast didn’t stop there. It still needed something.

Then I made, banana soft serve!

Applebee’s Triple Chocolate Meltdown= 810 calories.

Hot Fudge Brownie OOAP= less than 300 calories.

WIAW week 27

 Breakfast

Coconut yogurt (for .29 cents!) topped with homemade granola, and a pear on the side. Later on I ate some oats and a muffin I baked for the market! Yum.

Lunch

Homemade mac & chreese! Yum. I made this out of gluten-free brown rice mac noodles and Tal Ronnen’s cashew cream (1 cup soaked cashews overnight, then blended in the Vitamix with water) mixed with a tomato, basil, nooch, S&P, turmeric, and Diaya. I baked in the over at 350 for about 10 minutes until gooey and creamy. I was very impressed with myself! Super creamy and still pretty healthy! It taste so naughty. 😉

Dinner

Fattoush salad and other random items such as a banana bread LARABAR, hummus, & tempeh.

Feature Friday: Being Bitchy

As I’ve said before, I don’t force blog posts when I’m not in the mood. This week has been insane and I just don’t feel like a long, drawn out post!

Wednesday I worked at the day job from 7-12 then headed right to the new market hoping to have a better week than the first. We arrived an hour late but it was all good. We did better than the first week (which really isn’t saying a lot) and had a fun time doing so. After the 13 hour work day, I was exhausted.

Thursday I was scheduled to work 9-5 at the day job, then got asked to stay until 9 at night. Because I am a push over and can never say no, of course I stayed.

Today I am beat, tired, sore, and stressed out.

I’ve had no time to work out, make good food, or post.

I have every right to act like a whinny cranky bitch! 🙂

Breakfast:

Kiwi, bluebs, nanner with PB and coconut, dried cherries, ‘stashies.

WIAW week {26}

Hi guys! Happy Wednesday. Hope everyone is having a great week! Mine is pretty busy, as usual. Just catching up on some sleep, baking, school stuff, and experiencing a massive heat wave! I love the sun but when I don’t have time to go swimming or lay out by a pool, a heat wave is slightly annoying! But I’m not complaining, I’d pick a heat wave over a snow storm any day.

Breakfast

Tofu scramb, whole wheat chocolate chunk scone, a 3 pound bag of the ‘stashies.

Just joking, but seriously, look at how many I ate in the last 4 days! At least half the bag.

Lunch

Bean burrito, nothing too fancy.

Snackage

Peach donut? Enough said.

I’ve never seen these before but they were pretty good. The inside is white and hard like a peach, but I like my peaches mushy! I’ve also squeezed in a green smoothie for a snack too, perfect for this heat wave.

Dinner

Yellow zucchini (not yellow squash!) mixed with artichokes and a few seasoning made my the chef boyfriend. He also made me a kick butt tempeh BBQ sammich that was sooo yummy!

Favor

Scott and I are taking our yearly camping vacation out in the middle of no where with no phone, internet, or cable action. I am really looking forward to being “unplugged” for a week, however, I will still keep up on posting with scheduled posts. I know it is still a little over a week away, but I would really like some guest postage while I’m gone!
