Fruit & Fitness Routines

22 Sep

‘Morning friends ūüėČ

How is everybody today? I hope your week is going well. I am currently blogging from my college campus which is pretty sweet. I hate hauling my laptop around because it weights a ton but hey, I am making great use of my break time. Not only by blogging but by eating a yummy lunch I prepped last night:

Spinach tortilla with avocado, black beans and romaine lettuce inside

Organic fruit salad made by your truly using all fresh fruits from the Flint Farmer’s Market.

Mmmm organic strawberries…. so little and sweet.

This guy is far to wittle and cute to eat! ‚ô•

Nahh, just kidding. I ate him anyway. >:D

Don’t you agree that fresh, organic fruit taste so much better than the¬†store-bought¬†stuff? I could go on and on about why you should buy from farmers but I wont get into it today. All I’m saying is I bought peaches, nectarines, blueberries, raspberries and¬†strawberries yesterday for less than $15 and made a huge bowl of fruit salad that will last me a few days. Not only does the fruit taste better from a farmer’s market but its good to support the farmer’s that grow the produce.

In other news, I am planing out a workout routine to get me back and shape, or just back to being slightly active anyway. I’m getting much too lazy these days. My workout plan is starting to look something like this:

One day a week I will pick one of these activities of the day. I must choose one and use only one per day.

  • Rest day

  • Mild exercise (such as walking)

  • Mild exercise (again)

  • Cardio and arms

  • Cardio and legs

  • Cardio and core

  • Core and arms

Sounds like a pretty good plan for me. I found out that I don’t do so well when I plan things like, “Tuesday = cardio and core ONLY” This makes me not want to go to the gym on Tuesdays! Do you have a workout routine? If so what is it?

I have not tried more ways to eat my coconut butter yet, but I’m really excited to do so. I’m still up for anybody’s ideas!

SUSHI.

23 Aug

Last night we finally made sushi! I was so happy it turned out and it actually taste better than store-bought sushi.

Some people get really confused when I tell them I eat sushi because the first¬†thing that comes to mind is raw fish. Sushi does not¬†mean raw fish. The word sushi means “vinegared¬†rice”. Some people even try to argue¬†(for whatever reason) that sushi cannot be vegan because only “real” sushi has fish in it. That is incorrect.

Anyway, making sushi is a long and precise task and you have to be careful to follow ALL instructions or it will not turn out. Honestly, the only thing to worry about it the rice, everything else is simple.

For my roll I used cucumber, carrots and avocado. These are the typical veggies in a vegan roll. Why mess with a good thing?

Then we got out the nori, covered it with sushi rice and rolled it all together!

Sushi taste so much better when it is nice and warm and hasn’t been refrigerated! I would recommend everyone to try making sushi at least once, it’s so fun! You can get a mat and a paddle and whole foods for like $4. Then you need sushi rice and¬†sushi rice¬†vinegar. Once you invest a few dollars in those things you can make sushi plenty of times! Oh, and don’t forget the Nori… that’s pretty important too.

This week’s new and improved $21 challenge:

This week I have my food planned out pretty well. I made a HUGE batch of “Egg” Salad already¬†( I’ll share recipe tomorrow or later tonight) and I plan on making Miso soup because I have all the stuff to make it. I also plan on making toasted nori burritos’¬†with my left over sushi veggies. Yesterday I bought some brown rice and lentils in bulk so I’ll¬†make something with those too. At the beginning of each week I like to make a few big meals to keep on hand like big salads, pasta, already cooked rice…ect.

For breakfast I think I’m¬†going to¬†keep eating oatmeal (today’s oats were mixed with PB&co cinnamon raisin swirl!)

Lunch: “Egg” Salad sandwiches with plums and pears

Dinner: Nori buritto’s, stir fry,¬†or whatever is available at work…

I think I might go to the Flint Farmer’s Market tomorrow to get some cheap produce to make green juice. Tomorrow I have a dentist¬†appt.¬†&¬†an eye doctor appt. Fun stuff. All before I go to work at 2pm. It’s going to be a busy day! Later on I’ll post my “Egg” Salad recipe!

Taking it Easy

29 Jul

Yesterday I woke up early to a beautiful morning…

Much to beautiful to be stuck in the four wall of a sweaty gym. So I had another idea how about I go for a long nature walk/jog?¬†I have not gone on a nature walk in months! I forgot how easeful¬†this can be. I have been under way too much stress these past few months this was a great way to clear my mind and stay mellow the rest of the morning. Nature walking will be of my new favorite activities¬†and I will be sure to blog about my adventures in the wild! I’m ditching the running shoes and grabbing my camera for now on!¬†Yes, I will still go to the gym a few days a week but to me, the gym is really getting old especially when the weather is so nice! So look forward to my nature posts soon to come!

Now on to the food.

Tuesday Scott and I went to eat at my favorite local vegan cafe located inside the Flint Farmer’s Market.

I got my usual Soy Veggie Melt on pump. ūüôā

For dinner I had one of my left over veggie burgers. These still aren’t getting old! I love them.

Wednesday after my walk, I made the best tofu scramble ever. It was all made from left overs too! Tofu, Roma tomato, green bell pepper, onion, garlic, soy sauce, mushrooms and daiya.

After this I made some granola to take on my camping trip coming up on Monday.

sweetened with agave and flavored with lots of cinnamon! This morning I made some into a delicious cereal with almond milk and naners.

Well, I’m off to make espresso chip oatmeal cookies for my open house this Sunday!
