What I ate at Whole Foods Wednesday.

Last week, I had family from NJ come to MI! I only see them once a year so it is always special. They stayed at a hotel about 45 minutes away. You know, just as far as the nearest Whole Foods is located. No biggy. It’s not like I drove down there everyday just to stop and Whole Foods after spending time with the family.

And it’s not like I was super excited to stop at WF two days in a row and spend half of my pay check at the hot bar.

It was just a coincidence. No big deal.

Market Recap Monday (week 11)

After two weeks of being MIA from our original market, we were so happy to return!

The market stayed open an hour later to collaborate with the art fair that was going on this weekend as well. We were very excited about meeting new people from the art fair traffic. We saw lots of new faces as well as a few different news crews. Apparently one journalist has been trying to contact us for over a month now. I could tell he was very excited to write a story on our business! People really like our story. I think a lot of the locals are attracted to us because we are just average people trying to make a living doing what we love. We don’t have a lot of money but we put all of what we have along with our hearts into everything we do hoping to turn it into something big one day. It seems like each week we are getting at least 10 requests to open a restaurant. Sure this would be a dream come true, help us build up to that point! Seriously. 😉

Anyway, I wanted to show you the massive amount of produce I got FOR FREE.

A super generous vendor said his produce was “getting old” and he needed to get rid of it. So, I’m sure you can only imagine what I walked away with!

(that white veggie is apparently some sort of summer squash it looked so cute, I had to get it!)

Tons and tons or carrots, zucchini, melon, beets, onions, yellow squash, green peppers, cucumber, and other peppers.

I roasted as much as I could fit in my oven…

By the way, I thought that I didn’t like beets. But I now I love them roasted! With just a little basil and thyme.

I juiced some…

& I chopped a lot of them for a huge salad…

I also juiced about 20 cucumbers and poured them into ice-cube trays. I thought this would be a good idea for green smoothies. The juicer is just too much of a pain to wash!

Vegan Potato Salad

My new favorite potato salad!

Something I am eating a lot of when I am camping! I discovered this while searching for vegan potato salads. This was the first recipe I tried and I feel in love. It is super creamy and loaded with lots of raw veggies!

Holy SALAD

Confession: I HATE typical salads. You know, the house salads with ice burg lettuce, cold tomatoes, cucumber, and carrots. Seriously, just thinking about it makes me want to barf! How boring!

I always tell people…  “if I’m going to eat a salad, it has to be really interesting”, like this one:

Holy SALAD!

Ice burg lettuce, red cabbage, quinoa, flax seeds, sesame seeds, and chopped raw almonds.

This salad beast was amaze. It was everything I was craving and then some, I was really impressed with myself.

The dressing:

  • 1 T tahini
  • 1 1/2 T apple cider vinegar
  • 1 T agave
  • 1 squeeze of fresh lemon juice

Ever since I bought this red cabbage on sale, I have been craving a sweet & nutty salad like this one.

Lately, I have been incorporating a lot more raw foods in my diet. In the colder months I do a really bad job at this so I am so ready for this challenge! I feel like drinking my green smoothies every morning leaves me craving more raw veggies throughout the day. I am NOT getting sick of drinking these yet, I don’t think it’s possible! I thought it would be good for me to drink a green smoothie for breakfast everyday for a while. I’m not sure how long yet, I want to do 30 days but I might only do 21, we’ll see how this goes!

Today, after school, Scott and I are taking a PAID trip to Whole Foods (yes, we live 45 minutes away from the nearest WFs). Basically, a (quite popular) vendor at our FM sells ridiculously good salsa but apparently isn’t a good sales rep. So, Scott told him that he knows how to get his salsa into big businesses like Whole Foods and he was totally up for it. Hopefully Whole Food is interested so my boy can make a nice chunk of the salsa profit! But more importantly, it’s all about helping each other out. One of my favorite things about working at the FM is the vendors we work with. We all look out for each other and help each other when possible, it’s cute. Boy, I wish I could say that about my day job, huh? 😉

So yes, all you southern Michiganders better buy up this salsa if it starts selling at Whole Foods!

Good-Bye Winter Diet

& hello summer!
Oh my goodness, did I miss a WIAW post? Whoops! It’s been pretty busy around here. Forgive me?

I probably wont be doing much posting for the next few days due to the Farmer’s Market (FM) craziness.

I have been keeping up with my exercises though!

  • Sunday: 3 mile walk/jog outdoors
  • Monday: 4 mile nature walk
  • Tuesday: Pi/yo, 2 1/2 mile fast walk on tred.
  • Wednesday: Slow 2 mile nature walk, 1 hour Zumba
  • Thursday: Probably nothing. Early day at school right now then straight to work afterwards.

Lots of cardio so far this week! I guess I was just in that kind of mood. I think this is good for me though due to that winter weight gain! After work last night, I came home and tried on my jean shorts from last summer and YIKES! Not happening anytime soon! I wear sweat pants literally everyday, so trying on jeans (especially shorts!) was a somewhat of a breakthrough. Despite the muffin top, I think my weight should be back on track in a few weeks. Mainly because I eat A LOT better in the warmer months with all the fresh produce available and the fun warm weather activities.

See? A salad! I’m getting there. Just don’t judge me for that bag of PB pretzels i ate right after this!

Lady Gaga vs. PETA

Is somebody just know figuring out Lady Gaga is a freak?

Although I did not care to watch the VMAs, I still heard about Lady Gaga’s meat outfit. But what do you expect, she’s a freak. Whether or not you were offended by Lady Gaga’s meat entire at the VMAs you gotta admit, it did bring up a lot of meat talk which I do enjoy. I was surprised at how many meat-eaters thought this was so gross and unacceptable! Eating meat or wearing meat, either way; animals died. I’m really glad this got a lot of attention. I know it offend PETA and Ingrid even personally wrote Gaga a letter about this issue. Why doesn’t PETA write letters to all the celebrities who wear fur? I think they should start, I’ll join in too.  Look, even Ellen took action and made Lady Gaga a new veggie outfit:

I am not a Lady Gaga fan, but I honesty think she meant no harm. She just really likes needs attention and knows how to get it.

In other news, my gym no longer offers my power yoga class I’ve grown to love. What will I do!? My Rodney Yee tape? Doubt it, that shit made me want to fall asleep. I could not keep up with the tape so I just watched it instead which made me very sleeepy and relaxed. At least now I know that if there is ever a night I cannot sleep, this will do the trick. No offence Rodney, I just can’t keep up with you!

Also, I did not have to present my speech today, score!

I’m giving a lot of thought toward another fitness related challenge. Nothing too extreme, just something to keep me motivated. Perhaps something to do with building muscle??? Maybe so.

 Sorry if I always seem like I’m in a hurry these days but I must rest up now for my 12-hour work day tomorrow! It’s gunna be a long one!

Apple Picking, Attempt 1

Hey guys!

Have I ever told you how much I love September? 🙂

The weather is perfect; 76 degrees F and sunny. 

Second day of college was pretty good, although I was starving! I had a larabar during my break but that was not enough to hold me over. I think I may have to break out the laptop lunch box for college! I’m so excited. Anyway, after class I made a big plate of rice, broccoli, and edamame.

Since it was such a beautiful day, my friend and I decided to go to the apple orchard to pick some apples! I was so excited to go because this is something I always wanted to do. The orchard has 15 varieties of apples including my favorite; honeycrisp. After driving 20 minutes to get there, bad news… the cold weather we had last week (frost apparently?) killed all the apples and the orchard will not have apples for the whole year. How disappointing! But, on the other hand I did get to see all the farm animals!

Aww, I love them.

It was worth the trip. I also bought some real apple sauce too. Can’t wait to try it!

For dinner I made this new salad I randomly threw together:

Corny Chick Salad

Chickpeas, raw corn, tomatoes & cucumbers in Annie’s Goddess dressing. This is a great way to use up the last of the season’s produce and it’s pretty filling as well. I remember when I used to hate this dressing! I think it is best used on this salad.

Well, time to go practice my speech and get ready for tomorrow! Wish me luck on my speech Wednesday, I’ll need it.
