WIAW week 46

Hey guys!

 So happy to finally be doing a WIAW post! Just think, two weeks from today I will be on winter break!!! WOO! This Wednesday I thought I would another lazy WIAW post involving what I eat in my car. Yup, it’s What I Ate in my car Wednesday!!!

But first, please allow me to point out what a sometimes look like when leaving the house. Below is a photo of my sweet knee-high socks covered up by black jegging. I am so freaking stylish.

Anyway, on to the food.

I have been visiting a local vegan friendly deli. I don’t feel that it is appropriate to brag about the place because most of the employees just don’t have a clue. But, they are trying. They might be out of half the items on the menu but the vegan options seem to always be in stock.

Vegetarian Panini- Whole wheat wrap (they were out of panini bread), tofurky, vegan cream cheese, tomatoes, spinach, and red onion.

Not bad for $4.99. At a vegan cafe they would probably try to charge $8 for the same thing.

I also got vegan potato salad and tempeh salad, my favorites! Those were consumed on the way home. I was actually shoving a big scoop of  potato salad in my mouth at a red light and felt some old man look over and just stare. When I looked over at him he was still staring at me. Just watching me eat. It was extremely awkward!

These babies have been getting me into trouble. I can eat this whole tub of nuts, they are so good! If you haven’t had the cocoa roast almonds, you are missing out. But now, you can get this new nut pack with all of the good stuff like pecans, peanuts, and whatever else they throw in, I can’t stop eating them!

I really need to start cooking again. I have been craving soup all week! Like a nice lentil soup or a creamy sweet potato soup. I’ll have to try a new soup recipe this weekend when I find time!

Feature Friday: Almonds

Happy Friday!

How is everyone? Are you back in school? Back to work? Getting ready for Labor Day weekend? Glad that it is Friday?

I love FRIDAYS. I love writing up Feature Fridays each week, they are too fun! I get to relax after work, sip on my spinach blueberry smoothie and get some baking done!

A l m o n d s !

Why I love almonds:

  • Almonds are high in LDL-Cholesterol which can reduce your risk of heart disease
  • High in calories (energy)
  • Contains both B12 & protein
  • High in magnesium and potassium
  • Great source of healthy fat

Lately I have been putting almond butter in my green smoothies…

Favorite ALMOND combinations:

  • Almond + Date
  • Almond + Cherry
  • Almond + Chocolate

WIAW week 21

Breakfast

  • Tall green juice (cucumber, green apple, parsley, sprouts, lemon)
  • Iced tea

 

Lunch

  • Half of a leftover bean burrito

  • Half of a leftover espresso fudge brownie

  • Water

Dinner

  • Stir fry w/ tofu

Snacks

  • a few too many servings of pistachios

  •  8 ounces of raspberries

  • 1 mango

  • a handful of grapes

  •  chocolate 🙂

 

I haven’t been to the gym in FOREVER. Now if you’ll excuse me, I’m going to ditch studying and get my Zumba on.
(Seeing how my studying is getting me NO WHERE…. more on that a different day?)

WIAW week 19

Hey kids!

It’s that time of the week again!

 

For me Wednesdays now mean busybusybusy. Today I am going to Zumba for the first time in 2 weeks, then coming home to shower, then going to school to take a math exam… yuck, then going straight to my doctor’s cause I am not 100% better, then going straight to work! Meanwhile I need to be studying for my yucky med terms exam.

So consider this a mini WIAW!

Breakfast

Banana Split Oats

Makes one HUGE serving

  • 1/2 cup water
  • 1/2 cup non-dairy milk of choice
  • 1/2 cup 1 minute oats
  •  1 scoop Sun Warrior protein powder, I used chocolate! (review coming tomorrow, promise!)
  • 1 T PB
  • 1 t cinnamon
  • 1 t maple syrup
  • toppings: banana, chocolate chips, ground pecans, plain coconut yogurt, and of course, a cherry.
  1. Bring milk and water to a boil
  2. Stir in the rest of the ingredients (minus the topping obviously) and reduce heat.
  3. Cook for about 4 minutes stirring occasionally.
  4. Scoop into your favorite oatmeal bowl and get crazy with the toppings!

& that’s it for now!

Broke as a Joke

Long time no post, huh? It seems like with all of this free-time off work I would be posting everyday! I usually go on here and then get caught up in everybody else’s blogs that I no longer have the time to post on my own blog! How funny.

It’s huge! All the honey crisp apples with this big! Yes, this is apparently organic.

Yesterday, I went to Border’s…TWICE.

I went during my break at school with no money. I saw this workout journal I really wanted so I went back later with my friend to get it.

This journal is so cool. I hope that it will motivate me to work out more plus, it’s fun keeping track of things; that’s like my #1 hobby. Do you have anything you like to keep a journal of?

Broke as a joke:

Lately I have been doing a lot of bargain grocery shopping because well…. I’m freakin broke. My hours got cut at work (by like… an entire week) but I don’t feel like focusing on that right now. The point is, vegan food can be cheap. I’m sure you remember the whole $21 challenge, right? I’m not going that extreme this time but I need to start budgeting my food somehow. What better way to do it then to search for coupons? Seriously, google coupons for *enter your favorite vegan brand here* and see what comes up. Or even better, go to their website and they usually will have a coupon somewhere on the site. So forget giving up veggie burgers or vegan ice-cream for good (Or if not it’s usually a lot cheaper when you make your own veggies burgers, just sayin’…)

Gardein’s site offers a $1 dollar off coupon that you can print off twice then take that shit to Kroger.
