WIAW week 36

28 Sep

Hey friends!

H a p p y   W e d ne s d a y !

Before we get this party started, I want to update you on my first week of my weight loss challenge results.
Ready for this?

I weigh exactly the same as last Wednesday. Am I upset? Not really. I was sick all weekend and have been told that my body is probably holding on to everything still. Not to mention, I think I have a whole pound of snot in my nose right now! However, next week I am expecting a big number. I am aiming towards losing 4.4 pounds. I know that’s a lot but im going for it!!! I’ve been eating really good and going to the gym everyday.

Anyway. Please excuse the random meal order and poor quality pictures, I took them on my phone!

Stuffed mini spaghetti & acorn squash

Grilled veggies & fresh raw tomatoes

My first ever green smoothie with avocado! Banana, spinach, strawberries, avocado.

Oh, can’t forget the babes, look at his tongue! Aren’t they silly!?!?!

Welp, off to bootcamp tonight, wish me luck!

Feature Friday: Vegan Food, Good vs. Evil

19 Aug

As a “health food blogger” I find it almost embarrassing to say that there were times in my life that I did not care about health. In the beginning, my reasoning for a vegetarian diet was because I could no longer hurt animals, I just didn’t feel right eating meat. It wasn’t hard to give up, I never liked the taste of any meat.

Favorite childhood accidentally vegan foods:

  • Beef stew, with the beef picked out
  • Thanksgiving dinner, minus turkey, add masted potatoes x3
  • Ramen noodles, oriental flavored with just a pinch of the seasoning (not vegan, but whatev.)
  • French fries

Even though it wasn’t until later in my young life that I discovered chicken = chicken, I still choose not to eat meat. This lead to eating more “bad” carbs and processed food. As I became more aware of health and nutrition, I realised that I was doing this all wrong.

If I wanted to go vegan things were going to have to change!

This is why I am dedicating this post to all of my noob vegan readers out there! I don’t want you to make the same mistakes as I did, it’s not fun. Eating a healthy balanced vegan diet is very beneficial.

Just because you are vegan DOES NOT mean you are eating healthy.

The Bad:

Ramen Noodles

The Good:

Vegan stir fry

The Bad:

Vegan “lunch meat”

The Good:

Tofu & Tempeh

The Bad:

Soy Ice-cream

The Good:

Banana Soft Serve

The Bad:

Boring Salads.

The Good:

Adding nuts, grains, cool in season raw veggies, and homemade dressing to your salad.

The Bad:

Non-homemade smoothies

The Good:

Green smoothies!

Is there anything you would add to this list?

Market Recap Monday (week 11)

8 Aug

After two weeks of being MIA from our original market, we were so happy to return!

The market stayed open an hour later to collaborate with the art fair that was going on this weekend as well. We were very excited about meeting new people from the art fair traffic. We saw lots of new faces as well as a few different news crews. Apparently one journalist has been trying to contact us for over a month now. I could tell he was very excited to write a story on our business! People really like our story. I think a lot of the locals are attracted to us because we are just average people trying to make a living doing what we love. We don’t have a lot of money but we put all of what we have along with our hearts into everything we do hoping to turn it into something big one day. It seems like each week we are getting at least 10 requests to open a restaurant. Sure this would be a dream come true, help us build up to that point! Seriously. 😉

Anyway, I wanted to show you the massive amount of produce I got FOR FREE.

A super generous vendor said his produce was “getting old” and he needed to get rid of it. So, I’m sure you can only imagine what I walked away with!

(that white veggie is apparently some sort of summer squash it looked so cute, I had to get it!)

Tons and tons or carrots, zucchini, melon, beets, onions, yellow squash, green peppers, cucumber, and other peppers.

I roasted as much as I could fit in my oven…

By the way, I thought that I didn’t like beets. But I now I love them roasted! With just a little basil and thyme.

I juiced some…

& I chopped a lot of them for a huge salad…

I also juiced about 20 cucumbers and poured them into ice-cube trays. I thought this would be a good idea for green smoothies. The juicer is just too much of a pain to wash!

What is your favorite summer veggie?

WIAW week {26}

20 Jul
Hi guys! Happy Wednesday. Hope everyone is having a great week! Mine is pretty busy, as usual. Just catching up on some sleep, baking, school stuff, and experiencing a massive heat wave! I love the sun but when I don’t have time to go swimming or lay out by a pool, a heat wave is slightly annoying! But I’m not complaining, I’d pick a heat wave over a snow storm any day.

So here we are, another weekly WIAW, my favorite time of the week for blogging! Jenn does such a great job hosting the link parties each week, I love the post WIAW blog stalking, so start your own WIAW post today and be sure to link up to the party!

Tofu scramb, whole wheat chocolate chunk scone, a 3 pound bag of the ‘stashies.

Just joking, but seriously, look at how many I ate in the last 4 days! At least half the bag.

Bean burrito, nothing too fancy.

Peach donut? Enough said.

I’ve never seen these before but they were pretty good. The inside is white and hard like a peach, but I like my peaches mushy! I’ve also squeezed in a green smoothie for a snack too, perfect for this heat wave.

Yellow zucchini (not yellow squash!) mixed with artichokes and a few seasoning made my the chef boyfriend. He also made me a kick butt tempeh BBQ sammich that was sooo yummy!

Scott and I are taking our yearly camping vacation out in the middle of no where with no phone, internet, or cable action. I am really looking forward to being “unplugged” for a week, however, I will still keep up on posting with scheduled posts. I know it is still a little over a week away, but I would really like some guest postage while I’m gone! If you are interested in doing a guest post for me (not until July 30th) please please please contact me at whitney10@comcast.net or just comment below and we can discuss topics. 🙂

Thank you!

Lots of fresh summer fruit!

I Dream of Blenders

23 Jun
I read about it.
I think about it.
I dream about it.
I want it.
I need it.

& I finally got it.

My very own (refurbished) Vitamix! I just couldn’t take it anymore! It’s all I think about.

I ordered my Vitamix from The Vitamix Lady and received free shipping! Seriously, this girl is awesome.

My Vitamix came with:

This sweet Vitamix cook book that contains tons of healthy recipes!

Why I got it:

  1. It’ a business investment. Each week at the market, so many people ask for nut butters. My Ninja used to get so mad when he would have to make my nut butters, he just gave up on me.
  2. Raw food. ‘nough said.
  3. I need a new blender. Sure, I guess I can keep buying new blenders and waste hundreds of dollars OR I can just buy one nice one that will last forever! Or just 7 years at the earliest. That’s a long time!
  4. You don’t have to pay all at once! I am on a very easy payment plan: Pay half the amount plus $15 the first month, pay half of the differance the second month, pay the other half (the remaining balance) on the third month. It’s that easy! I don’t know about you, but I feel A LOT better paying like this, it almost makes me feel like it didn’t cost THAT much.
  5. The refurbished model will save you about $70 bucks. I can live with knowing that my blender was slightly used by a professional if it saves me $70. And hey, it’s like they tested it out for you so you know that it works great!

Yes, don’t mind me, I’m still talking myself into it!

What I’ve made so far:

A green smoothie! With no yucky chunks!

Then I made this 4-minute broccoli “cheese” soup! (it looks like a siab, but it’s soupp!)

New diet staple fo sho, Recipe coming soon!

Thank you so much for all of the get well soons on my last post, so sweet of you! I am feeling a little better, but far from 100%. I am just taking one day at a time trying to rest and eat lots of healing foods.

***Vitamix did not ask me to review their product nor did The Vitamix Lady. None of the items that I listed were given to me for reviewing or to sample. As always, this is my honest opinion.***

WIAW week 22

22 Jun

The Flu edition! :/

Diet Update:

I think I am going to go back to my normal eating habits ASAP. The last few days I have been getting serious headaches and my face is completely broke out. I know I am under a lot of stress right now, so that has a lot to do with it. These signs are also very common in the first steps of detoxification. But on Tuesday, I woke up feeling horrible. I was achy, tired, sore, and every inch of my body hurt. Flu symptoms? I think so.

Who gets the flu in June? Not to mention right in the middle of exam week???

As much as I love drinking my greens in the morning, it kinda messes up my day. I get hungry earlier, I crave junk food, and it messes with my eating schedule. I love having a big bowl of cinnamon roll oats, banana split oats, or even a breakfast pizzert. I feel like if I get my sweet fix in the morning, my whole day is a lot better.

So there you go, 14 day green smoothie challenge.

Strawberry banana smoothie

leftover pizza and veggie broth, yeah diffidently not what I eat on a daily basis.

Almonds, strawberries, raspberries, 1 mango, and a homemade snack bar.

More broth, and some tea. Oh, and lots of water.

Yeah, sorry for the lame WIAW, being sick does not make me creative or exciting.

BUT I may have mentioned on Twitter that I had some very exciting news to share with you…

But your gunna have to wait. I want to do a full blown post on it! No sneak previews!
