Hiiii friends!

I have so much to tell you in such little time! I’ve been pretty busy this week but I’m always thinking of my blog friends. I have lots of new topics I want to share with you in the near future, so exciting!

Holy cow, has it been 15 weeks already since Jen started the What I Ate Wednesday link parties? Every week is so much fun, thank you Jen for organizing this party! Woot woot!

Yeah, I snacked a lot today because my schedule is crazy cause I started a new semester today ahhhh! My new math class is okay, very boring but what can you do?

 DINNER Not sure yet probably left over roasted veggies and tofu!

Nut Butter Week Recap

Happy Monday everyone! I hope you all had a great Hug a Veg day. To be honest, I don’t really celebrate it because not a lot of people that I surround myself with approve of me as being vegan. Also, I had to work all day and in general, I have had a lot better days! How many hugs did you get?

I only taking two classes this semester and I’m already weighed down by homework. I just wrote a three-page essay and it took me over three hours! Really… three hours? It’s funny how its takes me so long to write a paper but it only takes me a fraction of that time to write a 400+ word blog post! 🙂 I also think it’s funny how my computer is a piece of shit and likes to mess with me while I’m trying to do semi-important tasks! Grr! Moving on…

In honor of Katie’s Nut Butter week I whipped up some meals using nut butters. Whatever Whitney, you use nut butters daily! 

Yeah so what, what vegan doesn’t! I did make a coconut butter smoothie for a late dinner one night:

I used

  • 1 tbsp coconut butter
  • a few frozen strawberries
  • a few fresh raspberries
  • a few frozen mangoes
  • 3 tbsp soy yogurt
  • 1/2 cup water

I loved how the coconut butter didn’t blend all the way so it had little coconut chunk surprises 🙂

For breakfast I like making PB&G’s (Peanut butter and granola sammies)

Adding apples or pears are a must…

And who could forget the hazelnut??? ♥

Best eaten with snackimals, pretzels, or in a grilled sandwich with pair slices.

I plan on starting my FITNESS CHALLENGE this week as well. Even with all this homework, I am going to plan exercise time in to get rid of this school stress. Longer posts to come later in the week involving…

As of 5 minutes ago, Whitney has joined the coconut butter club!

So it all started on September 21st, 2010 at breakfast time…

I spread my toast with plain PB and CB. But that wasn’t enough. I warmed up some CB and I spread it alll over my muffin just so I could get the whole coconut butter experience at once. I think I used a little too much on my muffin. (To much coconut butter, are you serious?) So then I took a bite…

and it tasted like….COCONUTS. Hahah, no seriously it was amazing though. I pictured it to be more sweet and creamy but it is actually nutty and very filling! I’m not used to raw coconut, I usually like my coconut toasted. This stuff is still the shit though. I can’t wait to make a smoothie out of it! I think I smoothie will taste good because the butter is so thick. Feel free to give me more ideas!

I’m off to work now, just thought I’d update you! If it stays nice out today, I will going on my 3rd apple picking attempt.

Fall Nature Walks

Are my favorite 🙂

After waiting for my 11am class for 2 hours this morning, I find out it was cancelled. At first I was angry that I wasted so much time waiting for my next class but then I realized, hey! I don’t have english today! Good deal. And that’s when I went for my walk. It was such a beautiful day out, I’m glad I had the chance to enjoy the weather.

So as promised, my full adventure from yesterday. We went out for lunch at Pei Wei for the first time. I was really excited when I saw their menu because they had tons of vegan options. Basically, you can replace any meat dish with tofu or veggies. Awesome, right?! I was so excited I finally got to eat sweet and sour tofu… or so I thought. When I ordered the sweet and sour ‘fu I expected it to look like the sweet and sour chicken I guess. You know, breaded, flavorful, different… I was wrong. The sweet and sour tofu was like stir fry with sweet and sour sauce.

If I wanted stir fry I would have saved $7 and made it at home. I mean it wasn’t bad, it just wasn’t what I was expecting. I wanted something nobody else has. The dish also had a very over-powering ginger taste that was not very pleasant and not to mention the brown rice was rather dry. I’m really glad that I also ordered the veggie springs rolls because at least those were somewhat good.

I think I would actually try this place again and order something completely different like pad-thai. They have a lot of good-looking choices on their menu so I hope to go back and find something spectacular.

Later we went to Whole Foods to do a little shopping. I picked up some new things to try like…

Ta-da! After hearing all the ranting and raving over coconut butter,  I finally bought some. Now what? Make a smoothie, bake with it, use it as a dip? Who knows. I’ll probably go and stalk some of your blogs to figure out something I can make with it. 😛

What a love most about Whole Food’s is their amazing salad bar, they have everything! I don’t even really like salad but their salad bar always looks amazing. Little did I know they also carry vegan caeser dressing!!! The dressing was really garlicy and creamy, I loved it. They made a good lunch for school today.

After getting a few things at Whole Foods we went over to Trader Joe’s to do some more shopping. I found something I have never noticed before.

Lots of muffins! ❤

These were delicious. I normally would eat a muffin as a snack but I ate this for breakfast with a piece of PB’d toast and it kept me full for a long time. I would have bought more than one package of muffins but they all expired within a few days (hey! that must mean they are made with real ingredients!) Next time I want to try the carrot muffins!

I think I’m going to hang out around the house for the rest of the day and enjoy my day off of work. Maybe I’ll read some other blogs and get motivated to cook something, you never know. I hope everyone has a marvelous monday!
