Hello friends ūüôā

Hope everything is going good on your Wednesday¬†afternoon. Mine is pretty busy- exams at school, studying, and lots of gym time. I am still¬†keeping up with¬†my weight loss challenge even though I’ve only lost a little over 2 pounds in four weeks, haha! I wish that was a joke. Oh well, I have been pushing myself really hard and I can’t even remember the last¬†day I wasn’t sore! <<<- I think that’s when you know you’re doing great!


Gluten-free, protein packed pumpkin spice pancakes {with chocolate chips!}

I found an old recipe on my blog for vegan pancakes then used GF flour instead of whole wheat, and added chocolate chips and lots of pumpkin pie spice instead of just cinnamon. I honestly thought the texture on this cakes where a lot better than the original¬†some-what gooey cakes. The GF flour made the pancakes so much more fluffy (and nutritious ūüėČ ) !

Almonds and chocolate chips! yes, I ate them just like this ^. One almond, one chocolate chip. Party in the mouth.

WIAW week 33

Yay I have time to post a WIAW this week!

Classes are going really well and so is my early morning workouts! But more on that later.



Whole wheat mixed berry pancakes


Unpictured veggie wrap & quinoa salad with fresh tomatoes, basil, and toasted nuts.


Lots of dates with Justin’s roasted almond butter! I also had an apple or two. And a few banana. OH, and I had a papaya for the first time, not very tasty to be honest. I was hoping for more of a tropical mango flavor.


Giant salad with homemade caesar¬†dressing (not impressed). Also some homemade veggie meatballs and spaghetti! Yum! Did not get a picture of it though. ūüė¶

Hi friends! Thank you all for your “get-well-soons” on¬†my last post. I think it’s working, I’m feeling better! ūüôā

I’m so ready for spring! I hate this food rut that I’m in! I’ve been eating so much crap, it’s terrible. My body is craving fresh foods. Hurry up and get in season! It is sad that I eat so much crap in the late winter. It’s my worst time of year for everything. I would like to think of my blog as a “health food blog” but lately I’ve felt like that is a lie! :X

So, although I have been trying to eat better,¬†I’ve really been digging pancakes lately.

My basic pancake recipe:

Serves two

I use this pancake recipe on my “chill” days when I feel that it is okay to eat a not so nutritious meal for breakfast.

Remember breakfast = the day’s fuel!

  1 cup flour, sifted (I use half white, half whole wheat)
    1 tablespoon vegan sugar
    3 teaspoons baking powder
    1 teaspoon cinnamon 
    1 teaspoon salt
    1 cup nondairy milk 
    1 egg replacer, prepared
    2 tablespoons vegetable oil
    1/2 teaspoon vanilla extract (optional)

You know what to do.

This mix can be used for just about any type of pancake: blueberry, strawberry, chocolate chip, you name it.

Just add in whatever you like!

But speaking of a¬†nutritious breakfast…


Vega’s Shake¬†& Go Tropical Smoothie

Literally, you mix it with water, shake & go.

I really like how simple this was! You just add it to 1/2 to 1 cup of water, that’s it! The taste was actually pretty impressive. Not too chalky at all! Finally!¬†I didn’t feel like I was forced to chug down a nasty chalky vitamin drink, I could totally taste the pineapple.

Would I buy it? Maybe for a treat. I think these run about $2-3 at Whole Foods, I don’t think I would pay that much for this. But I¬†guess once you think about it, $3 can’t really but you a very nutritious meal anywhere else.

Check out all of that iron, 30% in that little drink! Not to mention 11 grams of protein. I think I might start buying Vega products online once I start running this summer.

Pumpkin pancakes!


Gardein¬†chicken wrap with Annie’s Natural Goddess dressing¬†and butternut squash!




This gooey wrap with cream “cheese”, tofurkey, mushrooms and spinach.

Yes, today’s meals were filled with lots of meat/cheese alternatives. Yummy yummy. :/

What I didn’t tell you-

The night after my run (Sunday night) I became extremely ill. I went to bed at 11, woke at 1, felt like throwing up, didn’t go back to sleep until 5:30. It was horrible. What was up with this? It is extremely rare for me to wake up in the middle of the night. What could have caused this?

  1. Food poisoning?

  2. Eating the left over pumpkin that was in the fridge for a few too many days?


  3. Taking a pain med before bed? (pain meds can sometimes make me ill)


  4. Going for a run after a large meal?

After slight research I came to the conclusion that running after a large meal is a major no no. First off, after eating your body is digesting. This takes a ton of energy! Adding exercise on top of all that work is overwhelming for the body, I was asking it to do too many things. Sorry bod! Love yew. Second, after researching more on GERD I found that my symptoms were identical. It did sort of feel like heartburn but way more intense. Still, three days later, I feel worse after eating. Last, I need to stop eating so fast, seriously.

Have any runner ever experienced this?

Hey, at least it wasn’t my knees this time!

The First Bits of Spring

¬†Hello¬† H E A T W A V E¬†! ¬†How you doin’?¬† ‚ô• ¬† ‚ô•¬† ¬†‚ô•

Totally diggin’ this random 80 degree weather!

First day of warmness =

  • Outdoor grilling
  • Vegan chocolate peanut butter mousse pie (ok so maybe you could enjoy this anytime of year…)
  • First outdoor RUN

The boyfriend was not interested in any other activities today because all he wanted to do was grill. Works for me! Time to get my baking on! First I wanted to make a chocolate mousse pie. Then, it turned into this beast of a chocolate PEANUT BUTTER mousse pie!





Once again, random recipe then needs to be tested again (yum…) before posted! Pretty much if you know how to make chocolate mousse add some PB and sweeten with maple syrup. It held together perfect, I was impressed.

Five hours later:


Mexican food buffet? I think so! Refried black beans, grilled mushrooms, lots of grilled bell peppers, grilled Yukon gold potato and corn mixture, guac and salsa.

After this I went for my first RUN of the year, how exciting! I’m not a fan of outdoor running because I’m totally not a “runner”…yet. However I did run/jog/fast-walk almost 2 miles in a half hour. Times flies when you’re not on a treadmill, that’s for sure.

I’m also thinking about buying a fancy watch all you cool runners have. I really want a body bugg but they are pretty expensive.

Any watch suggestions?

PB Pancakes

Good Morning.

How is everyone on this chilly Monday morning?

The weather yesterday was insane around here… it was like a blizzard!

Over 200 closings in Mid-Michigan for today. Pretty much every school except my college! But you know what? I didn’t go anyway. I was not waking up and 5AM to shovel¬†snow so I could actually get out of my driveway and risk my life driving on an icy expressway to go to school. Sorry final speech exam, not today.


This called for some peanut butter pancakes.

Serves 2-3

  • 1 1/4 cup whole wheat flour
  • 2 T sugar
  • 2 1/2 t baking powder
  • 1/2 t salt
  • 1 1/2 cup soymilk
  • 1 “egg” I used the powdered¬†egg replacer
  • 1/4 cup peanut butter

I topped mine with Justin’s Maple PB mixed with more maple syrup

You can also add chocolate chips if you wish.

Tip: To save time in the morning, make a double batch of pancake mix and store in the fridge for a few quick breakfast’s throughout the week.

I have been debating on getting into some more yoga and this helped make up my mind for sure! I cannot wait to try out these blocks. One of the reasons I stopped doing regular yoga was because my arms and so long that sometimes some yoga poses can be really awkward and uncomfortable. I’ve seen blocks at other stores for around $10 which is a complete waste of money considering the blocks are just a big hunk of foam. However, at the yoga accessories online store, these blocks¬†were on sale for $4. (Sorry but the sale is over now)

I veganized this by using egg replacer.

I would recommend doubling this recipe because you won’t be able to stop eating them. I topped mine with maple syrup and almond butter.
