[eggless!] Tofu Salad

I’ve been mentioning this salad for a while now.

Seriously, it’s in just about every WIAW post from this month!


Current staple of choice:

I originally got this recipe from Kris Carr’s CRAZY SEXY DIET but I made a few minor changes and this is how I like it!

What you’ll need:

  • Firm tofu (16oz)
  • Vegan Mayo (1/3 cup)
  • Stone ground mustard (1 T)
  • Onion, chopped (1/8 cup)
  • Carrot, chopped (1/4 cup)
  • Parsley,chopped (1/4 cup)
  • Nooch (1/4 cup)
  • Sea Salt (to taste)
  • Pepper (to taste)

Drain the ‘fu out a bit first then mix it all up! I’m so lazy that I throw the carrot, onion, and parsley into my NINJA so I don’t have to chop it by hand. Keeps for 5 days.

Blogging for Breakfast

One of my favorite things that I have learned from the blogging community is how to make a killer BREAKFAST.

Is that weird?

Think about it…

OIAJ, Chia pudding, lazy pancakes, SIAB, Boat meal, Over night oats, ect.

I’m almost embarrassed to say that today was the first time I have ever made a breakfast Pizzert!

I see Kathleen make these all the time! However, the last one she posted diffidently caught my eye and I knew what was for breakfast the next morning.

I used her recipe for the pizzerts but I added a scoop of hemp chocolate protein powder and topped mine with coconut yogurt, banana chips, strawberries, toasted coconut, and cacao nibs.

I still can’t get over how amazing this was.I used to believe that I couldn’t eat things like this for breakfast cause it would make me sick. Then, I realized that it’s just white flour and sugar that makes me feel that way. Also, I really like this recipe because it’s made with oat flour instead of white or wheat flour. Score!

Fat Tuesday!

Happy Fat Tuesday!

You know, vegans can celebrate fat Tuesday too in multiple ways. We don’t need to scarf down a dozen paczkis, a box of custard donuts, and a gallon of ice-cream only to leave us feeling sick all day. In my opinion, the best way to celebrate Fat Tuesday is with a nice, non-dairy, milkshake and maybe a few cookies! Just because over 75% of humans are lactose intolerant (plus, cow’s milk is not meant for us anyway) doesn’t mean we have to go without milk-shakes!

Coconut Cookies and Cream Shake


In a blender combine,

Top with a piece of your favorite chocolate bar (grated).

Just to warn you, this is really addicting. The coconut milk make this shake really creamy and smooth! This is a great way to celebrate Fat Tuesday without being getting too fat. THANK YOU COCONUT MILK!

Also, if you feel like you need to get even more in the spirit, have some vegan chocolate chip cookies!

Oh my, these are the best! If you are like me and like your cookies soft and ooey gooey, these are for you! I brought them to work because I couldn’t stop eating them and amazed everyone. “What? These are totally vegan? No eggs? Why do they taste so good?!” So if you have this recipe book, go make these! If not, I’ll probably post it another day because I did make some changes to the recipe.

So go on now, don’t be shy, bust out that coconut ice-cream and those Oreos and have yourself a FAT TUESDAY PAR-TAY!

Greatest Granola & Hempy Mango Crunch

 I’m over that little break down I had this morning. I am going to the college tomorrow morning to straighten everything out. I did make good use out of all that negative energy though and turned it into this:

Vegan Sunshine’s Greatest Granola:

This recipe is very flexible. I do not add nuts or dried fruit because I like making a big batch then spicing it up with whatever I like later on.

  • 2 cups old-fashioned rolled oats
  • 1/2 cup wheat germ
  • 1/3 cup coconut flakes
  • 1/4 cup ground flax meal
  • 1 teaspoon sea salt
  • 1/2 cup agave nectar (or maple syrup or even a combo of them both)
  • 2 tablespoons canola oil
  • 2 tablespoons water
  • 1 tablespoon cinnamon
  • 1 tablespoon pure vanilla


  1. Preheat oven to 300 degrees F.
  2. In a large bowl combine oats, wheat germ, coconut flakes, flax, and salt. Mix well.
  3. In a small sauce pan, heat agave, oil, water, cinnamon, and vanilla until it starts to boil. Remove from heat and add to oat mixture. Mix well.
  4. Place mixture in a 9″ x 13″ pan.
  5. Bake for one hour and stir every 15 minutes.
  6. Remove from oven and let cool.

For me this makes about a weeks worth of granola if you use it as cereal every morning like I do (and recommend!) if not, it keeps for weeks anyway if stored in an air tight container.

Once I finally got around to the gym today (umm 3pm?…) I made another wonderful post workout snack. You better believe I used my Greatest Granola in this!

Hempy Mango Crunch:

  • 1/2 cup vanilla soy yogurt

  • 1 cup frozen mangoes

  • 2 tablespoons hemp protein powder

  • 1/3 cup almond milk

Blend until smooth. Layer the smoothie with Vegan Sunshine’s Greatest Granola and you have yourself a winner.

See? Even Maggie-bear loves it.

After I got home from a long day of work last night I practically drove right into one of these:

Two Boca” Chicken” patties between an everything bagel. Man, was I stravin’! Was this the least healthiest thing I could choose to eat at 9pm? Perhaps. It was so late but I forgot to bring a lunch with me and I sure didn’t feel like buying anything to eat. Have you ever had a job working around food that it grosses you out so much you eat there as little as possible? That’s where I am now. In need of a new job!

I did not attend power yoga this evening. Why? Because I didn’t feel like it. (Hint: my taking it easy post) Instead I went on the treadmill and walked to the last half hour of The Doctor’s and worked my arms. It was wayy too hot out for a nature walk!

Wow two posts in one day? You can tell this must be my day off.

Tomorrow is a new day.
