Ahhh! Life is finally back to normal. As much as I love the Holidays, they can be very annoying for someone who gets over stressed like me! I am extremely happy to be back to a little extra free time because I this year classes start on Jan. 16th.
Hello extended winter break
Drink more greens
I don’t think you can ever drink enough greens, but I feel like I did ok in this department. After buying my Vitamix last spring, all I did was drink green smoothies for breakfast, it was awesome! Not having chunks of spinach in my green smoothies made them so much more enjoyable.
Try to not eat as much processed food
For me, this always could use some work. I’ve been getting better but sometimes I fall back onto processed foods due to convenance.
Go to church regularly
Well, I was doing a great job keeping this goal but then the Farmer’s Market happened and after that, I had to work every Sunday morning. Personally I know that I do what I can.
Keep exercising regularly
I’m pretty sure that this is a goal every year. In 2011, I fell like I diffidently accomplished this farther than I ever have. Go me!
Put education first
This still needs some work….
Hopefully 2012 will bring on some intense challenges!
Mentally, physically, emotionally.
Cook more meals
Make the switch to ALL natural body care products
Mainly to help my skin stop breaking out! More of this another time.
Practice on my eating
Whaaa? Yup, I am going to practice on eating slower, chewing more, and not eating as much of certain foods that my belly doesn’t like.
1 packet of Starbucks instant iced coffee prepared with water and ice
1 Shot Kahlua
1 Shot vanilla vodka
Splash of almond milk
Mix together and enjoy😉

Each semester right around exam time, I come down with a nasty cold. It never fails! I often get asked why I catch so many colds when I seem to be a pretty healthy person. I guess my only answer for this is stress. I typically find myself sick right around stressful periods in my life; exams, holidays, vacations, new situations, etc. Whatever the reason, I always need a cure. This time I came up with…
The Magic Healing Bowl is probably the easiest thing to make. Who wants to cook when they’re sick anyway? All you have to do is first, cut up every veggie you can find.
For this bowl I used: Broccoli, carrots, peas, red onion, banana peppers, tomato, and cucumber.
Then, add the juice of one whole lime! (if you can handle it!)
Last, add a little balsamic vinegar and mix it all together.

So happy to finally be doing a WIAW post! Just think, two weeks from today I will be on winter break!!! WOO! This Wednesday I thought I would another lazy WIAW post involving what I eat in my car. Yup, it’s What I Ate in my car Wednesday!!!
But first, please allow me to point out what a sometimes look like when leaving the house. Below is a photo of my sweet knee-high socks covered up by black jegging. I am so freaking stylish.
Anyway, on to the food.
I have been visiting a local vegan friendly deli. I don’t feel that it is appropriate to brag about the place because most of the employees just don’t have a clue. But, they are trying. They might be out of half the items on the menu but the vegan options seem to always be in stock.
Vegetarian Panini- Whole wheat wrap (they were out of panini bread), tofurky, vegan cream cheese, tomatoes, spinach, and red onion.
Not bad for $4.99. At a vegan cafe they would probably try to charge $8 for the same thing.
I also got vegan potato salad and tempeh salad, my favorites! Those were consumed on the way home. I was actually shoving a big scoop of potato salad in my mouth at a red light and felt some old man look over and just stare. When I looked over at him he was still staring at me. Just watching me eat. It was extremely awkward!
New favorite snack alert!!!
These babies have been getting me into trouble. I can eat this whole tub of nuts, they are so good! If you haven’t had the cocoa roast almonds, you are missing out. But now, you can get this new nut pack with all of the good stuff like pecans, peanuts, and whatever else they throw in, I can’t stop eating them!
I really need to start cooking again. I have been craving soup all week! Like a nice lentil soup or a creamy sweet potato soup. I’ll have to try a new soup recipe this weekend when I find time!
